Quick and Delicious Breakfast Potatoes

Is there anything better than breakfast food?

 

Waking up on a Sunday morning and making a big breakfast is one of my absolute favorite things to do. Starting your day off with a delicious breakfast is an excellent way to set yourself up for a great day.

 

Whenever I am working with new clients, one of the first questions that comes up is “What do I do if I don’t know how to cook?”.

 

I get it. The thought of cooking can be so overwhelming, especially if you are just getting started but I promise it doesn’t have to be complicated! Finding a few simple and delicious recipes that you can get started with is a great way to get used to cooking while building up your confidence to try out some recipes that might be a little more complicated in the future! Are you still trying to figure out what to get started with?

 

Enter, Breakfast Potatoes!

 

One of my favorite recipes to get started with is the super simple and delicious recipe for breakfast potatoes.

 

These things are SOOO good, require basically no cooking and are amazing to pair with eggs in the morning and make a great side for basically any other meal that you are thinking about making throughout the day.

 

Before you get started, you’ll need a cutting board, a good knife and an air fryer. If you don’t have an air fryer, don’t worry! You can put these on a baking sheet and throw them in the oven to get the same result.

 

Ingredients:

·      3-4 potatoes

·      One green bell pepper

·      ½ red onion

·      1-2 jalapeno’s (this is optional)

·      2 tbsp olive oil

·      2 tbsp garlic powder

·      Red pepper flakes (optional)

·      Sea salt and black pepper to taste

 

Procedure:

1.     Pre-heat the air fryer or over to 350 degrees F.

2.     Dice potatoes, bell pepper, onion and jalapeno and place in a bowl.

3.     Add olive oil, garlic powder, red pepper flakes, salt and pepper and thoroughly mix everything together in the bowl.

4.     Place this mixture into the air-fryer, close and cook for roughly 20-25 minutes or until golden brown and crunchy, giving it a shake every 10 minutes or so.

 

That’s it! That is all it takes to make DELICIOUS potatoes that go with pretty much everything! Quick and easy recipes are my absolute favorite especially when you are just starting out with cooking.

 

Recipes like this are versatile, nutritious and relieve some of the stress and that feeling of being overwhelmed when you are just getting started in the kitchen! I love throwing two eggs on top of these potatoes and sitting down with a big cup of coffee to enjoy them. If you are feeling adventurous, you can even throw some guacamole and hot sauce on top of them before the eggs to give it a next level taste!
